The Opening Acts

Lava Nachos

Fresh tortilla chips piled high with your choice of ground beef, fajita or shredded chicken, and/or carnitas and topped with queso, American cheese, sour cream, fresh pico, cilantro, and of course, our homemade refried beans.

Buffalo Gator Bites

Citrus marinated gator, breaded & fried golden brown OR blackened, tossed in Gringo Bandito® Buffalo Sauce & served with avocado ranch.

Queso Fundido

A delicious Mexican fondue that is lit on fire and served with fresh tortillas!

Parliament Quesadelic

Our hot, thick, and creamy queso is made with the authentic, premium Casa Solana Mexican Cheddar Cheese.  Throw in a little ground beef if you’re feeling hearty.

Rock n Guac

Our fresh guacamole is prepared  by hand at your table by combining our ripe avocados, onions, jalapenos, lime, herbs and spices!

Motley Mexican Salada

Chpped iceburg lettuce, black beans, roasted corn, diced avocado and cherry tomatoes.  Dressings:  Avocado Ranch or homemade Cilantro Honey Vinaigrette

Ensalada Cesar

Chopped romaine lettuce mixed with our homemade Caesar dressing and cherry tomatoes, topped with fried tortilla strips and shredded Jack cheese.

Tortilla Soup

A traditional tomato based soup mixed with shredded chicken, corn, and not to mention a little kick of spice. Garnished with sliced avocado, shredded jack cheese & tortilla strips.

Crab Bisque

A downhome classic!  Fresh, lump crab meat in a thick, rich bisque makes an amazing showcase for your tastebuds.  Not a traditional “Mexican” dish, but we’re in Louisiana!

Main Events

Back Stage Burrito  (turn your burrito into a Chimichanga!)

Pick your favorite meat selection and combine with our homemade refried beans, then, we’ll top it off with your choice of sauce. For a little extra, stuff it with sautéed onions, mushrooms, roasted corn, and / or jalapenos!

Light My Fire Fajitas

Our marinated, grilled chicken served with the vegetable medley, fresh pico, shredded lettuce and sour cream combine to form a delicious symphony of flavors.  Of course, you will have to roll your own in one of our freshly made flour tortillas…

The Three Amigos Enchiladas 

Just let us know which meat you’d like and we will tightly roll your grilled selection in three pan seared, corn tortillas and smother them in your choice of sauce.

Zydeco Enchiladas

Three cheese enchiladas filled with traditional creole crab stuffing made with real lump crab and crab claw meat! Topped only with a lump crab sherry cream sauce.

Tour Bus Tailpipe

A poblano stuffed with cheese and served on a bed of any of our meats and topped with your choice of sauce! We recommend smothering it with our rich sour cream or jalapeno sour cream sauce and topping it with crusted pecans and raisins.

Fresh gulf shrimp sautéed in oil, Mexican spices, and freshly squeezed lime juice and deglazed with Sauza Giro Silver tequila, then chopped and stuffed into a taco!

Our fajita chicken is a tenderized chicken breast that is pounded out, marinated, and grilled to order!  Served on your choice of tortillas.  Also order as Fajita Steak!

Lava Cake

Specialty Margaritas

With ten beers on tap served at or below 29 degrees, plus a host of other great bottled selections, we thought that might be enough to keep everybody happy.  After a little more consideration, we figured, why not just really complicate things by offering a large selection of freshly prepared margaritas using fresh fruits and herbs all mixed at the time you order it?



Sliced kiwi, tequila, and freshly squeezed lemon and lime jump into the mosh pit of deliciousness to create a sweet blend in this frozen concoction.


Want a Mt Vesuvius with a little local flair, touch and flavor? Try this purple and gold margarita! It’ll have you Calling Baton Rouge!


With the right combination of fresh jalapenos, cucumbers, and tequila, we hope you are left thunderstruck!


Strawberry and banana blend in a smoothie texture to make this fruity margarita!  Served frozen or on the rocks.


Mix fresh mango with coconut nectar, tequila and Cointreau to make this delicious, yet potent cocktail that will make you feel like you’re rocking out on the beach in Cabo!


This ultra top shelf margarita contains 5 shots of alcohol and is not for the faint of heart. Consumption is known to improve your dance moves and frankly, my darling … you just won’t give a damn. (Served on the rocks only)


The “giant” of the menu! This margarita and upside-down 7 oz. Coronita concoction takes its name from one of the most dangerous and active volcanoes in the world! Order it strawberry or mango and get it frozen or on the rocks. Be sure to ask your server for other good beer options to pair with it.

Mexican Omelet

Traditionally known as Tortilla Espanola, this is a delicious cross between a quiche and an omelet.

French Toast

We use our Leidenheimer Poboy bread out of New Orleans to make this delicious, traditional French Toast, then we top it with Steen’s Cane Syrup.


This is a Mexican version of scrambled eggs with cheese, tortilla chips, eggs, and chipolte sauce.  Comes with avocados, sour cream, and pico de gallo.

Huevos Con Papas

A Mexican version of a scrambled egg hash.  We fill 2 fried corn tortillas with our scrambled eggs, Mexican style hash browns, pico de gallo, sour cream, and avocado.

Huevos Rancheros

2 Sunny side up eggs topped with spicy ranchero sauce, pico de gallo, avocado, and sour cream.

Crab Cakes

2 fried crab cakes topped with a sweet and spicy corn, serrano and pepper sauce.  Made with fresh lump crabmeat.

Breakfast Burrito

We stuff a burrito with chorizo, veggies (green and red bell peppers and onions) and scrambled eggs!

Egg and Chorizo

2 scrambled eggs with chorizo and pico de gallo, topped with sour cream and avocados.  Served on a fried corn tortilla.

Mexican Benedict

Jalapeno cornbread, sliced tomato, chorizo, and 2 poached eggs.  Topped with spicy hollandaise.

Breakfast Quesadilla

Chorizo, eggs, avocado and habanero sauce stuffed in a grilled tortilla!

About Us

Everybody deserves to be treated like a Rock Star from time to time, and when hungry Customers survey the landscape of places to eat for lunch or dinner, they will now have the opportunity to dine at Lava Cantina where they will receive a high quality, freshly prepared Mexican meal as well as a one of a kind experience.  If you are tired of the typical Mexican restaurant atmosphere with ceramic tile and adobe finishes, then you will likely find our vintage Rock n’ Roll Cantina décor as a refreshing and welcomed change combined with great rock videos and tunes blaring overhead.

You will notice our focused number of menu selections when it comes to ordering your meal, and in fact, you will be surprised that you may have the small menu memorized after just one visit!  Lava Cantina is a Mexican restaurant for those people who want high quality meals made from all fresh ingredients with a little twist of Rock N Roll attitude. The sub 30° beer, extensive tequila selection, and specialty margaritas are sure to help the overall experience, not to mention the great live music Thursdays through Saturdays!

If the food were not enough to keep you coming back, then the experience you receive definitely will.  The unique service model and restaurant décor is designed to ensure every Customer feels like a Rock Star!  Upon entering the building as an ordinary person, you will soon transform to a celebrity as you step in to a backstage concert setting where you will be recognized by our Stage Crew as a Rock Star getting ready to go on stage. Once you reach your table, the “Concert Set List” [most restaurants may refer to this as a menu] will be verbally reviewed with you, so you don’t have to worry about the normal stress of looking over a gigantic menu!

To start, we will provide the freshly made chips and salsas. You will likely want to cool down a bit with one of our freshly prepared, specialty margaritas that are made with everything from real fruit to ice cream.  If you want to try one of our other delicious Opening Acts [Appetizers], you only need to say the word.  In addition, we will provide you with enough salad, rice and beans to go around, and therefore, you only need to worry about selecting one of our freshly prepared Main Events [Entrees] made just the way you want it!  Need to satisfy that sweet tooth?  Choose one of our delicious Encore’s [Desserts] to get a little satisfaction.

With the authentic stage lighting glowing and high quality video sound system singing great Rock N Roll classics through today’s rock hits, you are sure to have an experience we hope you will be telling everybody about when returning to school, work or home.

Our Story


Steve Vaughn has been in the music business for over 40 years and has always had a passion for great tunes, most notably rock n’ roll.  Like many career musicians, Steve held a day job to support and raise his family for over thirty years.  As Steve approached retirement, he began to wonder what the “post career” chapter in his life might look like…

Steve’s son, Ian Vaughn, has worked in the restaurant industry his entire career and has always held a strong commitment to quality and service, however, due to his dad’s influences, music has been a passion that they have both shared.  Being born and raised in Baton Rouge, LA along with Steve approaching retirement, both Ian and his dad put their heads together on the possibilities of a great business they could bring to the community they have called “home” their entire lives – one that would be fun and offer a combination of all the things they love – great food, family, people, and music.  As the creative juices flowed through countless brainstorming sessions, the Lava Cantina brand was born.

Steve and Ian are more than just a father and son duo, they are best friends.  With a visit to Lava Cantina, you will see their personalities on display everywhere you look – from the Live Music that has played such a critical role in Steve’s life to the autographed memorabilia and rock n roll décor that Ian has obsessed with throughout his adult years, this restaurant is a production of their passions, and we hope you enjoy the food, the service, and the experience.
